韭菜有一股强烈浑浊的味道,是一道即香又臭的美味。袁枚在《随园食单》中详尽记录了韭菜的做法:韭,荤物也。专取韭白,加虾米炒之便佳。或用鲜虾亦可,蚬亦可,肉亦可。

韭菜、猪血、蒜末、姜末、小米辣
盐、油、清水、生抽

韭菜清洗干净,切成四厘米长段,叶和茎分开,因为成熟度不一样,这样在炒的时候更脆。

水开后分煮30秒左右捞出猪血。
